My kids love Thai chicken fried rice. With chicken, ham and pineapple, I thought it was more like a hawaii recipe for fried rice. I collect fried rice recipies. Okay, I don't go to the kitchen to ask the chef how the dish is done, but I study the dish, see what's in it and taste it carefully, to detect whatever ingredients I can from that dish. Or I just ask my mom-in-law who can outcook the best chefs in expensive restaurants.

Anyway, here's something I concocted which my kids love.

chicken fried rice ingredients

  • One honey pineapple. If you can be bothered, cut it in two lengthwise and scoop out the pineapple. You can serve the fried rice in the empty husk later. Normally, I don't bother and get my pineapple already cut.
  • 1 chicken breast, bones removed, diced. Season this in soya sauce or oyster sauce. If you can't find either sauces, then just season with salt, sugar and bay leaves or whatever herbs you usually season chicken with. I prefer to marinade the raw diced chicken in abalone sauce.
  • 2 bowls cooked rice
  • extra virgin olive oil or extra virgin coconut oil. If you use olive oil, use a saucepan instead of a wok as olive oil shouldn't be heated to such high temperatures. Coconut oil tolerates high temperatures better. Besides, coconut oil gives the food an asian taste.
  • 3 cloves of garlic (finely minced)
  • 1 packet of sliced ham chopped into squares
  • 1 bowl of diced carrots, corn and peas. I buy these frozen mixed vegetables from the supermarket specially for my fried rice.

How to cook the best chicken fried rice recipe

In my kids' opinion, this is the best. Everyone is entitled to their own opinion.
  1. Put a tablespoonful of oil in the wok.
  2. Heat up the oil over the fire. When the oil sizzles, add in the garlic and let it brown.
  3. Add in chicken and stir fry until the raw meat turns white.
  4. Add in the ham.
  5. Once the chicken is thoroughly cooked, add in the vegetables and stir fry until these are cooked, then add the rice one scoop at a time, mixing it in thoroughly.
