Cucumber Soup With Pork Ribs Recipes

One of my family's favourite dishes is a cucumber soup cooked with pork ribs. I'm glad about that because it is so hard to get my kids to eat their vegetables. Yet when I serve this soup, my vegetable-hating son goes straight for the cucumber. He says it is like jelly to him. Even if your kids aren't too keen on the veggies, just drinking the soup alone should give them some of the nourishment from the cucumbers that have been cooked in it.

I use a crockpot for this. It gives the best results and is the most convenient cooking method I can think of.

Ingredients for cucumber and pork rib soup

  • 700g pork ribs
  • 1 large old cucumber or 2 smaller cucumbers, whichever you can find in the market.
  • 2 large carrots
  • a handful of shitake mushrooms (6 to 8 large mushrooms should be enough. Add more if your family loves mushrooms)
  • 2 tablespoons raw sugar
  • 3 tablespoons soya sauce

Cooking method

  1. Marinade the pork ribs in raw sugar and soya sauce. Leave in the crock pot for at least an hour.
  2. Peel the carrots and cucumbers.
  3. Cut away the pulp in the cucumbers and discard the pulp and seeds. Wash away the seeds under running water. They don't taste good in the soup.
  4. Wash the mushrooms.
  5. Slice the carrots and cut the cucumbers in chunky cubes
  6. Add the carrots, cucumbers and mushrooms to the crockpot.
  7. Fill the crockpot with boiling water and switch it on high
  8. Once the soup begins to bubble, switch to low and let it cook slowly until dinner time.
